ABSTRACT The effect of medium doses of gamma irradiation on the quality characteristics of green faba bean kernel (GFBK) was investigated. The medium doses of irradiation used were 1, 5, 10 and 15 kGy. The results indicated that the moisture, crude protein, crude fat, ash, total sugar and reducing sugar contents were 72.40, 7.83, 0.58, 4.42, 16.09 and 0.51%, respectively. Whereas, the total acidity, pH value and total volatile basic nitrogen (VBN) of GFBK were 0.21%, 6.49, 41.90 ppm VBN kg-1, respectively. The total viable count (TVC), total coliform count (TCC) and moulds and yeast count (MYC) were 6.47, 2.34 and 6.07 log10 cfu g-1 GFBK, respectively. The moisture and pH value of GFBK significantly (p < 0.05) decreased by irradiation, whereas, crude protein and acidity value of GFBK significantly (p < 0.05) increased by irradiation. Irradiation produced no significant change in fat, ash, total sugar, and reducing sugar contents and TVBN of GFBK. Irradiation of 1 kGy showed an approximate 3 to 4 decimal reduction in TVC and MYC. While, TVC, MYC and TC in GFBK samples treated with 5, 10 and 15 kGy were below the level of detection (10-1 cfu g-1). The study concluded that the irradiated and un-irradiated GFBK grown in Syria have high nutritive value and good quality characteristics.
